The Beauty and Convenience of a Casserole Dinner

While the word ‘casserole’ immediately takes me back to my childhood in the 80s, you can’t deny the appeal of a casserole. 

I love casseroles because they are a great way to get dinner on the table for the whole family in a short amount of time. When it comes to casseroles, typically, a fully balanced meal is all combined into a one-dish meal, which keeps meal prep streamlined and simple.

However, usually, when we think of quick meals, healthy ingredients are often sacrificed for the sake of convenience. It can be hard to get a nutritious meal prepared for your family when you’re rushed and stressed. 

The casseroles I’m going to share today are healthy versions of your cozy casserole favorites. They are made with simple ingredients, many of which you probably already have on hand.

Thankfully, casseroles come a long way since my mom’s tuna casserole that she forced me to eat, while I gagged the entire time and chased down with grape juice. Even the potato chips on top couldn’t mask its awfulness.

These recipes are not that casserole.

A Word about Healthy Recipes

There is one caveat when I say ‘healthy,’ and that is, healthy may mean something different to different people.

Some people’s version of healthy is gluten-free, or a paleo diet, or keto, or Whole30 compliant – or maybe it’s just cooking with clean ingredients.

All that to say – when you look at some of these recipes, you may have to make some swaps based on what your definition is of a healthy meal. 

For instance, if you eat a paleo diet, a cheesy casserole keto recipe probably won’t work for you. And vice versa.

Or, you may choose to swap sausage or ground beef for a different lean protein.  

Maybe you don’t do gluten so instead you’ll choose corn tortillas over flour ones. You may switch yogurt or sour cream for Greek yogurt.

You may prefer brown rice or cauliflower rice over white rice.

However you define healthy eating, you may need to make some swaps to create these delicious casserole recipes.

The goal is to give you quick, simple healthy options that you can easily adapt in order to put a delicious meal on the table in a timely way.
