One of the things I look forward the most when a new year rolls around is a big reset.
In everything. I feel like with the craziness of the holidays, all discipline and structure goes out the window.
By the time the end of December comes around, I’m so ready to get back on the wagon of making good choices for my body and health and starting the year off right.
This year, I couldn’t really wait for January 1.
It’s December 26, and I’m ready to get back on track. Sometimes it’s small steps, like making a better choice for what to eat for breakfast or for a snack.
Going for something that’s better for you than reaching in the cookie jar. Even for breakfast. (Hand raised? Anyone else?)
Greek Gods Yogurt is a Good Place to Start
If you know me, you know I’m all about easy and shortcuts.
If I’m going to make better choices, I need them to be something that is fairly easy.
And if there’s a shortcut, too, well, sign me up. Well, Greek Gods Yogurts, which you can find at Walmart (in the dairy aisle, in the yogurt section, on the lower shelf) is a great place to start.

Dark Chocolate and Coconut Frozen Yogurt Cups
Like I said, I’m all about easy and shortcuts, so if I’m going to make a better choice and get back on track this year, I need to do something that’s simple, quick, and accessible.
Enter the dark chocolate and coconut frozen yogurt cup.
This is so, so easy to make, and it’s great as a quick breakfast on the go or an afternoon snack when you’re hangry and about to eat through the whole refrigerator before dinner.
Just 6 ingredients to put together including your mix-ins, no baking – it really doesn’t get simpler than that!
Ingredients
1.5 cups of granola (here’s my favorite homemade granola recipe!)
1.5 tbs of melted coconut oil
1.5 tbs of pure maple syrup
3 cups of Greek yogurt (I used Honey Vanilla Greek Gods Greek Yogurt, and it tasted AMAZING!)
1/2 cup shredded coconut
1/2 cup dark chocolate chips
Steps and Tips to Create Dark Chocolate and Coconut Frozen Yogurt Granola Cups
Take a cupcake baking tin and line cups with cupcake liner.
In a bowl, mix together granola, melted coconut oil, and maple syrup. It will be a little sticky.
In spoonfuls, evenly fill the cupcake liners with the granola mixture, about 1/2 way up. Press down firmly. You should have enough for a dozen.
Then, in a separate bowl, mix together yogurt, coconut, and dark chocolate chips. In spoonfuls, fill the rest of granola cups. You can go right to the rim. Sprinkle cups with extra coconut and chocolate chips, if desired.
Place in the freezer for about 2 hours. Once frozen, store in the freezer in an air-tight container.
Substitutions and Even Better-for-You Options
You can make a few substitutions, depending on what you have on hand and your own lifestyle preferences:
You can sub melted butter for coconut oil.
You can sub honey for maple syrup.
You can make your own granola instead of getting it store-bought.
If you want to make this an even better-for-you breakfast or snack, you can use unsweetened shredded coconut as well as cacao chips or carob chips, especially if sugar is a concern. Organic ingredients can also up the ‘better-for-you’ level.

Ingredients
- 1 1/2 cups granola
- 1 1/2 tbs melted coconut oil
- 1 1/2 tbs pure maple syrup
- 3 cups Greek yogurt
- 1/2 cup dark chocolate chips
- 1/2 cup shredded coconut
- Extra chips and coconut to sprinkle on top
Instructions

5| Sprinkle cups with extra coconut and chocolate chips, if desired.
6| Place in freezer for about at least 2 hours.
7| Once frozen, store in the freezer in an air-tight container.
And sometimes it’s just baby steps too.
It might be too much to overhaul your whole eating lifestyle, but a few small actions even for breakfast or a snack can make a big difference and get you on the right track!

Per the recipe in Step2: In a bowl, mix together granola, melted coconut oil, and maple syrup. To confirm I am going to add additional melted coconut oil and maple syrup to the home made granola I already made with the melted coconut oil and maple syrpy correct? The home made granola already has the melted coconut oil and maple syrup. I am adding more to it correct? Please advise.
