Easter Treats (for Sanity’s Sake)

Even though it’s all about quarantine right now, that’s not stopping Easter from coming. And thank God for that.  More than anything right now, we need the hope of Easter. And while our Easter will look a lot different than most years, we can still make it fun for the littles at home, and around here, that means Easter treats.

I’ll admit, it’s not as much fun making them while knowing I won’t be able to share them with company. But my boys still deserve to have a fun holiday, even if it’s just us. And I’m hoping to leave some at the doorstep of friends, too. All at a safe social distance, of course.

Rice Krispie Bird’s Nest: 3 Ways – All Easy, All No-Bake

In this post of 35 different Easter treats, I saw a lot of fun ideas, and on one of those nights where I couldn’t sleep, I decided I’d like to put my own spin on some of these treats.

I love this rice krispie bird’s nest recipe I’m sharing today because, first of all, it’s no baking. That’s a huge win for me.

It’s so easy to put together. Like, so easy.

And, there are some fun ways you can put this together – the obvious bird’s nest (2 ways), but also a fun 3rd way – a bonus bunny patch!

The most fun part about this is the green color – and it’s so easy!  And genius – instead of marshmallows, you’re going to use colored Peeps! I love that!

So let’s break down the instructions.

Here’s what you’ll need:

 

Ingredients

Non-stick cooking spray

23 oz. packages of Peeps to melt  – one blue, one yellow

Additional package of chick and/or bunny Peeps (for the tops)

2 tbs butter

3 cups Rice Krispies cereal

2 cups shredded coconut

Green food coloring

2 tsp water

Milk Chocolate and Peanut Easter M&Ms

Carrot cupcake topper candy (I got mine at Walmart or you can order them from Amazon as well!)

 

Additional Materials

Cupcake tin

Parchment paper

 

 

To Make the Nests

Take a cupcake tin and spray with non-stick spray.

In a bowl, put in one package of blue Peeps and one package of yellow Peeps. Add 2 tbs of butter. Melt in the microwave in 20-30 second intervals, until fully melted. Be sure to stir as you check on it. Also, keep an eye on it as it can overflow if it gets too hot. It will be a nice, green color once it’s stirred.

Once fully melted, add in 3 cups of Rice Krispies. Transfer to a bigger bowl if you need to.  Stir until cereal is fully coated.

By spoonfuls, scoop Rice Krispie mixture into cupcake tins and press down with a piece of parchment paper so your fingers don’t stick to it! Make a small, bowl-shape indent on the top so the eggs, chick or bunny has a place to sit.

Allow to cool (I put mine in the fridge), and then using a spoon, gently scoop nests out of the cupcake tin.

Then, take your 2 cups of coconut and put it in a ziplock bag. Add in 2 tsp of water and 2-3 drops of food coloring and shake around to turn the coconut green. You can add more food coloring if you want the coconut darker or brighter.

Once the coconut is fully mixed, take small handfuls and place it on top of the Rice Krispie nests.

To make bird’s nest, place 3 Peanut M&Ms in each nest.

To make a chick Peep nest, place the chick on top of the nest with 3 milk chocolate M&Ms by its side.

To make a bunny Peep patch, place a bunny in the patch with a carrot candy cupcake topper.

You’ll get a dozen bird’s nests from this recipe!

I put mine in the refrigerator again to harden them up!
