I Need Easy and Healthy Meals, STAT
Is it just me or is anyone else feeling the post-Easter-bulge?!? It feels like Christmas all over again. The Easter dessert hangover usually isn’t this bad for me, but maybe it was this eternal winter that would never turn to spring….or maybe it was my boys hitting the heights of toddler tantrums…or maybe I was just eating my stress again…
My brain is too tired to figure out why I’m eating so much, I just know I need to do something about it. But do you know what I did? I actually took a pregnancy test, because I thought that might be why my clothes were tight! Can you believe that?!? My self-preservation tactics are completely shameless,.. apparently, the depth of my denial knows no bottom.
A few weeks of bad eating adds pounds so quickly, doesn’t it? What I want to know is why doesn’t it work that way in reverse? After 3 days of healthy eating, why am I not a whole dress size smaller? Why?!? Totally unfair.
Clean Eating Reset
Anyway, whenever I feel my clothes getting tight, I know another clean eating or Whole30 round is due, and healthy crockpot recipes are, in my book, the fast track.
One of my big issues with eating healthy and doing a clean eating challenge or Whole30 is that I really need meals to be quick and easy. It’s so tough with twin toddlers to find uninterrupted time for meal prep, and healthy crockpot recipes are one of my real simple go-to cooking hacks.
That’s all I’m gonna say before we get to the recipes. I saw this tweet a few months back from Jada Schiessl (you can follower her Twitter here and her blog here) and I think of it every time I do a healthy eating roundup:
Ha! Every person on Whole30 TOTALLY gets it! And truth be told, I always scroll down to the recipe when I’m looking for one, too – so, enough said there.
So, OK! I’ll get to the recipes! I know you are hungry and edgy! A few tips first:
- Always double-check the recipes. Some people’s versions of Whole30 might not be by the book. What I do, in those cases, I either swap out or use a clean or compliant substitute – or I leave it out altogether. I’ve never really missed an ingredient when I’ve done that!
- For several of these recipes, you can swap the meat, especially if it’s ground: you can substitute ground beef for ground turkey, etc.
- As always with crockpot recipes, be aware of the times. Each crockpot is different and cooking times may vary!
I’m planning to go through every recipe on this list on my next round (and after – I have some old favorite dinner recipes I want to sneak in there) because healthy crockpot recipes are so much easier. I’ll edit the post once I finish to report back!
