Easy & Delicious Carrot Cake Easter Bark Recipe

Easter is one of my favorite seasons of the year. It’s different than Christmas – it’s weightier and somber, especially during Holy Week, leading up to Easter.
But the celebratory tone when Sunday finally arrives – it’s almost like I can literally feel a weight being lifted.
I try very hard to keep things as Christ-centered as I can as we celebrate Easter. I’ve even made my own Christ-centered decorations and Easter treats. But there’s nothing wrong with the traditional Easter flavors we know and love.
This treat from Aldi was my inspiration.
It looked very small, lol – and I thought (of course!), “I can make this myself!”
During a very busy time of year, this simple carrot cake Easter bark is wonderful no-bake treat.

First, I need to give this disclaimer: there are no carrots in this carrot cake bark. Not sure if that’s surprising or totally a given.🤣
I was on the fence if I should include it, but I don’t know.
I just didn’t feel like it fit.
If you’d like to add shredded carrots to the top of your bark for a more authentic ‘carrot cake’ treat, you are absolutely welcome to! There are a lot of ways to vary this recipe.
The original version I saw called for raisins. I omitted them, but feel free to include them if you like them!
Ingredients
Nutmeg (sprinkled on – your preference the amount!)
Cinnamon (same as above!)
1/3 cup chopped walnuts
1/3 shredded coconut
Carrot themed bunny patch sprinkles
Instructions
1| Cover baking sheet with parchment paper
You can use any kind of baking sheet, but your standard 11×16″ should be fine! Just be sure to cover it so you have a little extra parchment paper hanging over the edge.
2| Melt almond bark
I do this in the microwave. First, I start at about 1 minute or 90 seconds, then stir. Then, I continue to melt in 30 seconds increments.
Often, you can stir the chunks in the melted bark, and they’ll melt all the way just from being stirred.
***You can also use white chocolate chips (about 2 10 oz. bags, but I like the consistency of almond bark better. Feels more luxurious🤣).
3| Add melted bark to baking sheet
Spread bark in a baking sheet with a spatula, filling it up. Depth should be between about a 1/4 ” or so.
4| Sprinkle cinnamon and nutmeg over the top.
I didn’t measure these out. This is totally to taste and preference. Nutmeg can be a little stronger than cinnamon, so don’t be too enthusiastic with it!
5| Sprinkle coconut and walnuts over the top.
I started with about a 1/3 cup each, but this is also to preference. Go with more or less – however you like!
6| Add the carrot sprinkles
This is the step that really makes it look like a carrot cake themed treat! Be sure you use a version of sprinkles (here are the ones I used) that have green and orange in them.
7| Gently press ingredients into the bark
You can use a spatula, a small piece of parchment paper, or even your fingers (clean hands, of course!) to gently pat the ingredients so they stick into the bark.
This is an important step! Don’t skip it! Make sure all of the ingredients are pressed into the bark, not just sitting on top of it.
8| Place in refrigerator to harden
You can also do this at room temperature, but the refrigerator speeds things up!
9| Break bark into small pieces
When ready, take out of the refrigerator and lift the corner of the parchment paper to begin breaking pieces into pieces (that’s why we needed the parchment paper to be a little oversized!).
Once it starts breaking, you can just crack off the pieces in various sizes. There’s no rhyme or reason to it.
You can also use a pizza cutter.
10| Store in an airtight container
You can keep this on the counter or in the refrigerator.
11| Serve and/or share!
You can plate this for a delicious Easter day treat, an after-school snack, or a treat to bring to an Easter gathering!

Instructions
1| Cover baking sheet with parchment paper
2| Melt almond bark in microwave for 90 seconds, then in 30 second increments until melted.
3| Pour melted bark onto baking sheet and spread with spatula.
4| Sprinkle cinnamon and nutmeg over the top, in your desired amounts.
5| Sprinkle coconut and walnuts over the top.
6| Add the carrot sprinkles.
7| Gently press ingredients into the bark with a spatula, parchment paper, or your fingers.
8| Place in refrigerator to harden (can also be left on counter).
9| Break bark into small pieces by lifting parchment paper or use a pizza cutter
10| Store in an airtight container
11| Serve and/or share!

Easter Gift Option
Carrot cake Easter bark is also sweet Easter gift or favor!
You can wrap it in in cute little cups or cellophane bags (or both), add a tag for a thoughtful neighbor or teacher gift – or a favor at an Easter gathering!
You can put the bark in the bag, then in the cup – or you can put it in the cup, then in the bag.
If choosing the second way, just make sure your bags are big enough to fit the cup. If not, just reverse it!
FYI: I used these cute snack cups from Dollar Tree! They are perfect! This is a verrrry sweet treat – a small cup is just the right size.
If you are refrigerating this treat, be sure to let it come to room temperature before packaging it, so it’s not damp when you wrap it.
