High Protein Carrot Cake Easter Frozen Yogurt Bark
Healthy Easter Snack? No Bake? Yes, Please
Easter is one of my favorite times of the year.
It’s a reflective and weighty season—especially throughout Holy Week. But there’s such an anticipation in waiting for Easter Sunday to come. Like it can’t come soon enough.
There’s such a powerful sense of joy on Resurrection morning, like a huge burden has been lifted.
I do my best to keep our Easter celebrations focused on Christ. I’ve even created my own faith-based decorations and Christ-centered Easter treats to help with that.
Still, I also love the Easter classics and the familiar favorite flavors. But do you ever feel like it’s all too much sometimes, especially in the sugar department?
I was eyeing (and I caved in and bought, lol) this treat at Aldi a few weeks ago.
Then, I remembered that I had made different versions of frozen Greek yogurt bark (a loaded strawberry one for summer as well as a pumpkin pie one for fall) and thought “I can make a healthy version of this!”
During a very busy (& sugar-filled) time of year when there’s a ton of treats and mindless snacking, this simple carrot cake Easter bark is wonderful alternative that is filling, healthy, high protein, but also can hit that sweet spot.

First, I need to give this disclaimer: there are no carrots in this carrot cake bark. Not sure if that’s surprising or totally a given.🤣
I was on the fence if I should include it, but I don’t know.
I just didn’t feel like it fit.
If you’d like to add shredded carrots to the top of your bark for a more authentic ‘carrot cake’ treat and some added veggies, you are absolutely welcome to! There are a lot of ways to vary this recipe.
The original version I saw called for raisins. I omitted them because they are higher in sugar, but feel free to include them if you like them!
Ingredients
32 oz. container of vanilla Greek yogurt
Nutmeg (sprinkled on – your preference the amount!)
Cinnamon (same as above!)
1/3 cup chopped walnuts
1/3 shredded coconut
Carrot themed bunny patch sprinkles
***Feel free to add in other mix-ins like raisins, etc.
Instructions
1| Cover baking sheet with parchment paper.
You can use any kind of baking sheet, but your standard 11×16″ should be fine! Just be sure to cover it so you have a little extra parchment paper hanging over the edge.
2|Pour Greek yogurt on baking sheet.
Spread bark in a baking sheet with a spatula, filling it up. Depth should be between about a 1/4 ” or so.
***A note about yogurt: You can use whatever type of Greek yogurt you like – full fat, non-fat, whatever. Just be sure it’s Greek yogurt, not regular yogurt – the consistency is just better for freezing.
You can even use plain Greek yogurt if you want, and if you want to sweeten it up, just add pure maple syrup and vanilla extract.
Full-fat Greek yogurt is recommended – it freezes just a little creamier than non-fat. Non-fat tends to crystalize and become a little icier.
4| Sprinkle cinnamon and nutmeg over the top.
I didn’t measure these out. This is totally to taste and preference. Nutmeg can be a little stronger than cinnamon, so don’t be too enthusiastic with it.
5| Sprinkle coconut and walnuts over the top.
I started with about a 1/3 cup each, but this is also to preference. Go with more or less – however you like!
6| Add the carrot sprinkles.
This is the step that really makes it look like a carrot cake themed treat! Be sure you use a version of sprinkles (here are the ones I used) that have green and orange in them.
7| Gently press ingredients into the bark
You can use a spatula, a small piece of parchment paper, or even your fingers (clean hands, of course!) to gently pat the ingredients so they stick into the bark.
This is an important step! Don’t skip it!
8| Place in freezer to harden until solid
I put mine in the freezer overnight, but a few hours should be fine!
9| Break bark into small pieces
When ready, take out of the refrigerator and lift the corner of the parchment paper to begin breaking pieces into pieces (that’s why we needed the parchment paper to be a little oversized!).
Once it starts breaking, you can just crack off the pieces in various sizes. There’s no rhyme or reason to it.
***It will be really cold, and if it’s thick, it might be a little hard to break. You can let it thaw just a tiny bit to make the breaking easier.
And you may want to put parchment paper in your hands as you break to tamp down the coldness!
You can also use a pizza cutter.
10| Store in an airtight container
This will keep in the freezer for about 30 days.
As it sits in the freezer, it may be very hard to bite into when you’re ready to eat it. Feel free to let it thaw out a little until it’s a comfortable temperature and texture for eat so you don’t hurt your teeth!
This delicious Easter treat is great for an after-school snack or something to nosh on to ward off sugar cravings!

Carrot Cake Easter Frozen Yogurt Bark
Ingredients
- 32 oz. Vanilla Greek Yogurt ** see note below
- Cinnamon (sprinkled, to taste)
- Nutmeg (sprinkled, to taste)
- 1/3 cup chopped walnuts
- 1/3 cup coconut flakes
- Carrot themed sprinkles (sprinkled)
Instructions
- Cover baking sheet with parchment paper
- Spread Greek yogurt in a baking sheet, filling it up. Depth should be between a 1/4 - 1/2 inch, just hitting the rim.
- Sprinkle nutmeg and cinnamon over the Greek yogurt.
- Add in walnuts, coconut, and sprinkles.
- Gently press ingredients into the yogurt, making a flat-ish surface.
- Place in freezer and freeze until solid (I did about 4 hours, just to be safe).
- When ready, take out of the freezer and lift the parchment paper and break into pieces or use a pizza cutter.
- Store in an airtight container in the freezer, up to 30 days.
Notes
***You can use any Greek yogurt you like - with or without fat - with fat freezes better. If you use plain and want to brighten it up, add 1/4 cup pure maple syrup or honey and a tsp of vanilla extract to the yogurt before spreading on the baking sheet.
