Fun and Easy Cookie Cutter Quesadillas

It’s no secret that the kitchen isn’t really where I shine. I can make things look pretty, cooking and baking isn’t really my intuitive sweet spot.
So I’m always looking for a fun food hack that comes across as really impressive, even though it’s crazy easy.
That’s where these cookie cutter quesadillas come in!
You can make these for any holiday, any occasion where there’s a cookie cutter that goes along with it.
Today, I’m going to show you how I made a fall | Thanksgiving & Christmas version of these quesadillas. Once you have the technique down, you can use them for any time of the year with seasonal cookie cutters.
With only a few simple ingredients, you can level up a simple quesadilla appetizer and make it really festive—perfect for fall gatherings, Christmas parties, or anytime you want to make mealtime a little more special.
Also awesome because even picky kids will love them and be amused at the fun shapes!
Ingredients
***I suggest buying a package of 9″ tortilla shells and a 1 lb. bag of shredded cheese. The recipe below will create about 5 quesadillas depending on the shapes of the cookie cutters, so if you have the ingredients on hand, you can make as many as you want!
2 large (9-inch) flour tortillas (For fall, I used sun-dried tomato and corn tortillas to get a seasonal orange and yellow color. For Christmas, I used a spinach and herb blend for green.)
2 cups shredded cheese (cheddar, Monterey Jack, or your favorite blend)
1| Assemble the quesadilla. Heat a skillet or griddle over medium heat. Spray with non-stick cooking spray. Place one tortilla in the pan and sprinkle with shredded cheese. Top with the second tortilla.
2| Cook until golden: Toast for 2–3 minutes per side, until lightly golden and the cheese is fully melted. Remove from heat and let cool slightly on a wood cutting board. I barely let mine cool – I pretty much immediately went to cutting!
3| Cut into shapes. Press your cookie cutter firmly into the quesadilla to create fun seasonal shapes. You might need to wiggle a little to push the cutter all the way through. I used a paring knife to trim the edges and help things out, which also gave the quesadilla nice crisp, defined edges.
4| Serve and enjoy. Each quesadilla yields about 5 shaped pieces, depending on your cutter size. Serve with salsa, guacamole, or sour cream for dipping.

Pretty much, if there’s a cookie cutter shape, you can make a quesadilla!
If possible, find a tortilla shell that corresponds with the season (green, orange yellow).
I didn’t try this (my son likes just plain cheese), but you can add extras like shredded chicken, bacon, beans, or veggies for a heartier version. Just use extra care when pressing the cookie cutter and cutting with the knife.
Fall and Thanksgiving Quesadillas
This version used adorablethis fall version, which has a pumpkin, squirrel, turkey, leaves, acorn and candy corn!
Christmas Tree Quesadillas
I also created these for Christmas as well with a Christmas tree cookie cutter, using the same technique as above! I stuck with the tree because I felt like it looked best with the green tortillas, but you could use any shape!
