Simple Summer Party Treat: Beach Themed Oreo Pops
I’ve been making these Oreo pops for just about every occasion this year… Easter, Mother’s Day, Teacher Appreciation, Father’s Day, 4th of July….why not try another version for summer fun? How about a breezy, beach-themed Oreo pop?

They are so fun and so easy. My twin sons LOVE these pops and get so excited when I come up with another reason to make them.

I got most of my materials at Walmart. I linked them up in case you want to just add them to your cart!
Almond bark (3 squares for 10 Oreo pops; 4 squares for a dozen +, etc. Roughly, 1 square = 3 pops)
Double Stuff Oreos (make sure it’s Double Stuff or Mega Stuff!)
Tubes of yellow & blue writing icing (not gel!) (You can get a box of small tubes, or larger tubes with attachable tips)
OR
Red baker’s twine (or ribbon, raffia, etc.)
Instructions for Beach Themed Oreo Pops
1| Melt almond bark
Melt bark in microwave starting for 1 minute, using a microwave safe bowl. Then, stop and stir in 30 second increments, so it doesn’t burn. Often, if there are still chunks, you can stir it and it will melt, without needing to microwave again.
I found that 1 minute, 30 seconds was perfect for about 3-4 squares of almond bark.
2| Add sticks to Oreos
After bark is melted, add pop sticks to Oreos. Hold the Oreo firmly in your hand to keep the sides from separating. Insert stick in the cream of the Oreo, about 3/4 of the way through.
Generally, Double Stuff work best. However, I did use one batch of Double Stuff that cracked every time I put the stick in. I’ve made these several times, and that happened only once.
Mega Stuff can be a little heavy, but the idea is that you need more ‘stuff’ than just regular Oreos.
3| Coat Oreos with melted bark
Add a dollop of bark to the top of the Oreo and swirl it with a spoon to flatten.
Tap the stick on the side of the bowl so the excess chocolate will drip down the sides and create a flat surface.
Liberally add melted bark to the sides of the Oreo so the sides of the cookies are covered. Be sure to make sure the chocolate gets on the place where the stick meets the cream, to act as kind of a seal.
Gently tap again on the side of the bowl so the excess will drip off.
Flip the cookie over and repeat.
4| Allow chocolate to harden
Place cookie pops on a piece of parchment paper or a silicon baking mat on top of a baking sheet.
Allow it to air dry for a few hours. Or you can place them in the refrigerator or freezer to speed things up.

5| Decorate the cookies using writing icing.
With yellow icing, create a sun in one of the top corners with a half circle and lines radiating from it.

Then, create the ocean waves on the bottom half of the cookie with blue icing.

You may need to use a toothpick to smooth out some of the icing surface if it doesn’t come out cleanly.
Add an umbrella to the top corner for a fun effect.

OR
If gifting, you can wrap the pops in with a cellophane wrapper and tie off with baker’s twine or raffia ribbon!
To Serve at a Party
I think these pops would be perfect for a fun summer pool party!
I served them in a Dollar Tree decoupaged crate, lined with yellow tissue paper. Then, I covered floral foam in the same lemon-themed napkin and placed it in the crate.

As an afterthought, I decided to add sand to cover the napkin to really create the whole beachy vibe!
Then, just add your Beach Oreo Pops!
